After one too many long weekends spent in lockdown, Kiwis are overdue a real long weekend - one where we can see family and friends, head out to the bach and best of all, entertain. With that in mind we thought we'd share a recipe from one of our most popular recipe books, Platters & Boards.
We all love a good platter, and this book features ideas for every occasion - halloween, Christmas, movie night, mezze boards and more. For something a little different, we've shared this amazing brunch board that can feed a crowd, or be scaled down and enjoyed as a romantic breakfast for two.
- Hard-boiled free range eggs
- Store-bought bread sticks
- One baguette, sliced
- Marinated green olives
- Tzatziki (store bought or home made)
- Some yummy NZ honey
- Mixed nuts
- A soft cheese of your choice
- Roasted figs with tarragon (take six fresh figs, halve, sprinkle with tarragon and drizzle with lemon olive oil - roast at 180 degrees for 8-10 minutes)
- Orange juice and prosecco for mimosas!
- Platter, serving bowls and utensils.
To assemble the platter, simple place the eggs, olives, tzatziki and figs in bowls and arrange on the platter. Fill the gaps with the remaining ingredients, aiming to get the platter as "full" looking as possible.
