Roasted Aubergine & Tomato Sauce Ragu
This rich, smoky sauce makes weeknight cooking a little easier. Packed with charred aubergine, ripe tomatoes, and garlic, traditional tomato sauce can be used wherever you would. Toss it with pasta, layer it in a lasagne, or use it in a moussaka. Add a sprinkle of feta or fresh herbs, and dinner is sorted.
